Yield: approx 4 dozen
1 c graham cracker crumbs
4 T butter, melted
16 oz cream cheese, softened
½ c sugar
2 eggs
1 tsp vanilla
1 can Comstock cherry pie filling (or your favorite flavor)
Combine cracker crumbs and butter. Press a teaspoon full into each miniature cupcake liner. (Made easier by using the bottom of a jigger.)
Beat cream cheese until light and fluffy; gradually add sugar and mix well.
Add eggs and vanilla; mix well. Spoon into liners.
Bake 350 for 10-12 minutes.
Place a cherry and about ½ tsp sauce over each cheesecake. Chill.
